LOL!! Tonight, I am fixing chicken breasts, green beans, potatoes and hopefully, a salad. The wife is going to go to the gym this evening to work out. I think maybe I will do my lifting this afternoon. I am going to go back this evening and do some cardio.

Last night, it was turkey wraps, sweet corn, tomatoes, cottage cheese and salad. Lots of cold things is just what the doctor ordered when it gets hot.

cindy, as you can easily tell, I don't like to eat. LOL! I would like to invite you and the rest of my fellow txer's to put recipes on this thread as well as have general conversation about what you are eating as it is an important part of our lives to eat properly, or at least as well as possible.

Actually, the turkey wrap that I had is also pretty good for you. I used sprouted grain wraps to make them--Ezekiel is the brand name and they are probably one of the better choices for wraps in that they are much slower burning carbohydrates. I added some hummus and lettuce along with the turkey. Tonight, I am making swiss steak.

Cisco..what store do you buy the Ezekiel brand? Well tonight we cheated and ate out; grilled chicken sandwich and fries( i know the fries are bad, but couldn't pass up:-) Oh, I do like hummus, and I did try tabouli (not sure if spelled correctly) just the other day and it was great!

Actually, I buy it at the health food store, but I bet if there is a Whole Foods, you can get it there--the wraps anyway. Then you can just freeze them. You could also get them off of google and see if there are any in your area. They also have salt free turkey breast, which is one of my staple foods. If I am not mistaken, Alexia makes Yukon Gold french fries, which have a fairly low salt content in them. You just put them in the oven. I can eat these if I am going to go to work that day or work out. Just a suggestion. I really wacth salt and sat fat.

I am trying to eat better, but my fear of raw meat is keeping me from cooking stuff like chicken and turkey. I can't stand having raw meat in the house and I usually can't eat it if I see it raw before it is cooked.

I can't see myself going vegetarian even though my husband is.

Any tips other than a psychiatrist for carefully cooking meat at home?

I have tried gloves, but I still have to scrub the whole kitchen after I cook raw meat. Also, I can't eat it that night since I saw it raw. I have to get over it that night and eat it for lunch the next day!

I know, crazy!

Hi Sarah,

In answer to your question, the safest way to cook poultry and other meats is to use a meat thermometer to test doneness. You even have to be careful with ground meat and treat it like poultry.

You are right in scrubbing your counters with an anti-bacterial solution, or safe sterilizing cleaner for those who can't handle strong cleaners. Poultry is very safe to eat if you take the proper precautions.

Unfortunately, I don't know how you can overcome your aversion to raw meat. Do you still find it nasty to look at even it is a piece of meat like a boneless, skinless, chicken breast, or is it the thought of looking at the whole bird?

All I can suggest is that maybe as time passes you may get used to seeing raw meat. I don't like to see live crabs, lobsters, squid, etc. and I wouldn't eat them because I would be picturing what they looked like when they were alive. I know I'm crazy because people love calamari, crab cakes, and lobster tails. They look too much like creepy-crawlies to me. As a child, my parent used to cook crab and lobster but I got sick once on crab and will never touch it again. I actually don't like too much meat. I like chicken and we have started eating more fish.

Good luck with your cooking endeavours. Let us know how it turns out. By the way we tried a yummy Weight Watchers recipe for chicken parmesan. Let me know if you are brave enough to tackle seeing meat and I will send you the recipe.

Wow, would I ever be in trouble if I could not stand to look at raw meat. I do some of the cooking around here because if I didn't I would starve to death! Sarah, you might try looking at Kashi meals in addition to Weight Watcher's stuff. They are pretty good, too. As with a lot of other things, you have to look at the sodium content. Last night, LadyDi and I went out for dinner. All I can say is thank God for elliptical machines and treadmills!! Dinner was:
Salad with Goat Cheese, Croutons and a citrus vinaigrette
Flatbread with small pieces of chicken, goat cheese, peppers and pesto
Elk loin with Gratin Potatoes, Kale with a red wine reduction
The flatbread was on the house because I have written restaurant reviews for the place and given the chef "Dilly Beans" that we canned ourselves. Since I like the food and it is on the internet, maybe, just maybe, I helped get them some business. I was glad to do it and did not do it for anything other than the fact that I like the food. I ended up doing 3 miles on the treadmill and 3 miles on the elliptical just to keep up with the extra calories!!

Boy, I have been neglecting this thread!! Must have been too busy eating! LOL!! We had pork chops on the grill last night along with sweet potatoes, Green Giant Immunity Blend vegetables and a salad. I used Bolthouse dressing on it (Honey/Mustard) It's made with yogurt. 45 calories per 2 Tbsp.m Pretty good!<<<<<----I give it one chaw.

Today, I went over to the local seafood distributor and bought some jumbo lump crab and some shrimp. We had crab cakes and shrimp cocktail, green beans and salad for dinner.

Tonight, I think we will either do turkey spaghetti or turkey burgers. Personally, I like the turkey burgers a little better because of convenience. If we add some potatoes and a vegetable or two, it will be just fine.
