I love making omelets with Davidson eggs! If anyone has ever watched the older Julia Child French Chef programs, she had one where she made omelets. She didn't quite cook them all the way which made them a "softer" omelet. I always wanted to try that, but with the fear of salmonella I didn't dare try it with ordinary eggs. With the Davidson eggs being pasteurized, I can now make what I call my "Julia Child" omelet. Rather than the fully cooked, dry omelets I made before, the ones now are that soft, creamy French omelet that I always wanted to try. Also, if you go to their website, you can request coupons.
