Obviously people are looking for the types of food they should be eating after receiving an organ. I am not real sure what taboo foods are for all of the different types of transplant, but I will try to give some guidelines. For those of you in the know for different organs, please contribute your knowledge. I had a kidney transplant in 2007.

Lean meats-chicken, turkey, fish, different types of game like venison, elk.

Fruits and vegetables-AVOID GRAPEFRUIT, the juice from, POMMEGRANATE, juice from, STARFRUIT, juice from, as well as GREEN TEA (these are the only no-nos as far as I know) I know that some kidney transplants are also sensitive to potassium, so watch foods that are high in it if you are one of these folks As far as I know, everything else is wide open. One needs to consider vegetables which are high in good fats like avocados. We need fats, especially this type in our diets, if we are able. This is high in potassium, so be careful. Instead of russet potatoes, I have started eating sweet potatoes because of higher vitamin and mineral content and as far as I can tell, fewer carbohydrates. I also eat things like broccoli, brussels sprouts, cabbage, tomatoes, peppers and whatever gets too close to my fork. The same thing is true with fruit.
Other foods- Almond butter is another source of good fats. I eat Full Circle, which has no salt.

Thanks for your inputs.
My kidney TX Center only said to stay away from raw fish/seafoods otherwise I could eat and drink anything. Of course grapefruit was a no-no due to its interference with many drugs. Since we get frequent blood tests, I know that for me potassium, sodium and a number of other vitamins and minerals are no problem. As for green tea, I drink one teabag worth every day so if it is a potential problem, it must depend on the individual or perhaps the amount consumed each day.
Prior to the TX, I had to control my potassium intake and so I quit drinking coffee and milk which contributed over 60% of my daily required maximum intake of 2000mgs.
Pomegranates and Starfruit are not part of my diet so I know nothing about them. In addition, I eat processed meats (salami, pastrami, turkey, bacon, etc.) occasionally.

Salt is something I watch closely. Under 1,500 mg most of the time. Green Tea-my wife and I were at a transplant conference in Chicago. they had a speaker and a transplant nurse stood up when the guy was speaking and said that they had a problem with it because it was the only thing they could figure out with a whole bunch of people who had sudden rises in prograf levels. I do not eat brats, sausage, salami or pastrami simply because of the salt. I eat 2,500-2,800 calories a day and if I want to stay under 1,500 mg of salt, these foods are prohibited. Good luck!

It's interesting reading of each persons experiences. Since my TX, I've eaten different foods containing different amounts of salt, potassium, drank diet soda (which contains phosphorus compounds and caffeine) and my blood tests and blood pressure measurements were always normal and my cholesterol tests are always OK also. And, I am unaffected by stimulants such as caffeine and adderall and don't get headaches (perhaps I'm too dense). My 3 sons all have the initial indications of kidney problems (protein in the urine and one has slightly elevated creatinine). I think your inputs may help the majority of TX patients as I can't believe I am anywhere near an average person in these regards. But perhaps there is someone as strange as me. Since I feel so good physically, I've been trying to get my UCSF transplant team to test me to see if I'd be a good candidate to use a new technology they've been working on to eliminate the anti rejection drugs, but thus far they've told me it's only experimental. Incidentally, as a result of treaties such as NAFTA, the WTO (World Trade Organization) has successfully sued the U.S. to eliminate the country of origin of all imported foods. This means you have no idea where your foods come from and worse, how they've been handled. How much POOP is in your meat and fish? The FDA won't know.

The thing with me is that the cause of my kidney problems were most likely unrecognized high blood pressure. This is my reason for not eating much salt. I can taste my food better too. I don't take Adderall as I don't need it for anything. Caffeine is not a problem as I drink from one to three cups of coffee in the morning. I don't drink soda because I am just not fond of it and I get plenty of water during the day. I like to eat and occasionally, drink a beer or two, but these are my only "vices".

Having a nice meal this evening with my wife and my brother who is joining us. Fried Chicken, mashed potatoes a nice salad with a lot of veggies and some bacon/blue cheese dressing. I have been real easy with my salt this morning, so I should not have a problem keeping under 1,500 mg of salt for the day.
